lentil soup with roasted kale



I highly recommend this roasted kale recipe. The temperature here dropped very quickly and very harshly this past weekend, so I harvested the last surviving remnants of the kale from the garden--it was the perfect way to use it rather than let it go to waste. It made a crispy, tasty topping for lentil soup.

I love roasted kale! Even my kids love it! In fact, I'm getting kale in my veggie order this afternoon to make this very thing.

Wow, that is cool that your kids like roasted kale. I think back on some veggies I didn't like as a kid, and I think some of it was in the preparation. Roasting just makes veggies so GOOD.
